Al Canto is an Italian neighbourhood bistro and bar on Hay Street in Subiaco, open every day from 7am till late. We take our cue from the Italian neighbourhood table: coffee in the morning, pasta at night, and carafes of wine in between. Out the back, Derrière is a hidden aperitivo and cocktail bar for guests who aren’t quite ready to call it a night.
HistoryLong before Al Canto, 483 Hay Street was already woven into Subiaco's dining story. In the 1990s the address was home to Phil Sexton's Oriel Café — a bar, brasserie and café once described by Business News as having “changed forever Perth's dining paradigm.” We're proud to be carrying on that tradition of good food and good company on the same stretch of Hay Street.
Founder & TeamAl Canto is owned and operated by Stefano Rossi, founder of Perth hospitality group Albarossa. Born in Venice and raised inside Camping Fusina, a family-run holiday village on the edge of the lagoon welcoming up to a thousand guests a day, Stefano grew up around hospitality — by the time he was General Manager there, he was overseeing accommodation, restaurants, bars, a marina and ferry services. He moved to Perth in 2008 and founded Albarossa, since building and operating a string of well-loved local venues across the city, each one shaped around the neighbourhood it sits in. Al Canto is his latest project.
Albarossa's other venues:
- Koorak, Kings Park — a café, restaurant and kiosk set inside Kings Park. Currently open.
- The Kiosk, Floreat Beach (2008–2025) — a dated beachside kiosk transformed into a recognised coastal venue with a loyal, local following. Sold in 2025.
- Beach St Co., Fremantle (2013–2022, formerly Kiosk Fremantle) — fully rebranded and redeveloped in 2019, expanding capacity and revenue. Since sold.
- The Bassendean Hotel (2015–2021) — a heritage pub turnaround that improved operations while respecting the venue's history and community role. Sold prior to its current renovation.
