Al Canto is an Italian neighbourhood bistro and bar on Hay Street in Subiaco, open every day from 7am till late. It follows the rhythm of the Italian neighbourhood table: coffee in the morning, lunch through the day, pasta at night and carafes of wine in between. Out the back, Derrière is Al Canto’s aperitivo and cocktail bar for guests who aren’t quite ready to call it a night.
History483 Hay Street has a long connection with Subiaco dining. In the 1990s, the address was home to Phil Sexton’s Oriel Café, a bar, brasserie and café that became part of the suburb’s hospitality story. Al Canto isn’t trying to recreate Oriel, but we like that this corner of Hay Street has a history of being somewhere people gather.
Founder & TeamAl Canto is owned and operated by Stefano Rossi, founder of Perth hospitality group Albarossa. Born in Venice, Stefano grew up around hospitality at Camping Fusina, his family’s holiday village on the edge of the Venetian lagoon, before moving to Perth in 2008.
Since then, he has built and operated a number of local hospitality venues, each shaped around the neighbourhood it sits in. Al Canto is his latest project.
Albarossa’s venues include:
- Koorak, Kings Park — café, restaurant and kiosk inside Kings Park. Currently open.
- The Kiosk, Floreat Beach (2008–2025) — a beachside kiosk developed into a well-established coastal venue. Sold in 2025.
- Beach St Co., Fremantle (2013–2022, formerly Kiosk Fremantle) — redeveloped and rebranded in 2019 before being sold.
- The Bassendean Hotel (2015–2021) — operated as a heritage neighbourhood pub before being sold.

About Al Canto
